Traditional Greek salad recipe

On the menu in every Greek restaurant and many non-Greek restaurants as well, this salad has many individual variations, but here are the basics to work from. This is the traditional version that does not include lettuce.
Note: Many cooks peel the tomatoes if the skins are tough; it's a personal call.
Prep Time: 15 minutes
Total Time: 15 minutes
Ingredients:
  • 4-5 large, ripe, tomatoes
  • 1 large red onion
  • 1 cucumber
  • 1 green bell pepper
  • 1/4 pound (113.5g) of Greek feta cheese, sliced or cumbled
  • dried Greek oregano (rigani)
  • sea salt
  • top quality extra virgin olive oil
  • 1 dozen Greek olives (Kalamata, green Cretan olives, etc.)
  • pickled pepperoncini hot peppers (garnish)
  • 1 tablespoon of water (optional)
Preparation:
Wash and dry the tomatoes, cucumber, and green pepper. Clean off the outer skin from the onion, wash, and dry.
Cut the tomatoes into bite-sized irregularly shaped chunks, removing the core. Salt lightly. Slice the cucumber into 1/4-inch slices, cutting slices in half (whether or not you peel the cucumber is a personal choice). Salt lightly. Slice the pepper into rings, removing the stem and seeds. Salt lightly. Slice the onion into thin rings.
Combine the tomatoes, cucumbers, green pepper and onion in a large salad bowl. Sprinkle with oregano, pour olive oil over the salad, and toss. Just before serving, place the feta on top of the salad, either as a slice or crumbled (as in photo), and toss in some olives. Sprinkle the cheese with oregano (and pepper if desired), mix the oil and water and drizzle over the top, and serve, garnished with hot peppers.
Yield: Serves 4-6
Additional ingredients
  • Anchovies: if you like this salty fish, add a couple to the salad before tossing.
  • Capers: toss in a few if you like them.

Where did Shelley go?

Last night was very eventful and tragic because one of Oscars baby turtles went missing! Ozzy was really upset as 'Shelley' was nowhere in the house! Anyway today started with some early appointments and a Starbucks. In the afternoon, we went to one of our properties 'Vista Del Porto' that we are renting on the Chania harbour front, to check in a client! He was extremely excited and thrilled with the views of the sea and the interior. For more information on this apartment, visit: http://www.vrbo.com/270153  where there is a range of properties that can be rented, including Villa Dionysia! Later on, we are also going to check another client into one of our other houses, so we are busy, busy, busy! Just off for some lunch in the Palace with Andreas and the kids, the salads there are delicious! Hope everyone has a lovely day Den x

Fire in Chania!!!

Today the morning started slow...I had a quick sunbathe on the terrace, before Andreas came and dragged me into work and my new PA (my 9 year old son) Oscar. He was really helpful and loved learning about running Cretan Life, he now wants shares in the busineess and to become the MD haha!

Half way through the morning I got a phone call from the kids at home. 'Mum, have you heard about the fire?' They were sunbathing on the roof, when a massive black cloud came over them! Suddenly, there was screaming and shouting coming from around the Turkish quarter! The top of a house was on fire, and smoke was blowing everywhere! The streets of Chania soon crowded, to find out what was happening! The kids said that the fire was quite big, but the fire men were very quick at putting it out! I'm just eating a yummy ice-cream from the shop next door! Love Den x

Happy Birthday Kyriacos! Hope you enjoyed your night! (August 2nd)

Yesterday was a very hot day. My daughter Clarissa was excited because her boyfriend Max was arriving! Unfortunately my youngest Oscar was very ill, so i spent my day looking after him and making sure the house was tidy. Andreas, Harry, Max and Clarissa went to Kyriacos' birthday party at the Swedish Hotel in Kalives (Kiani Beach Resort.) Andreas and the kids seemed to have had a really good time, and said the service was good and the free champers was even better, shame i missed out haha! They said the entertainment was good too and they generally had a fab night and met a few old friends. I think the boys went for a secret drink after in the Palace too! What are they like!? Tonight I cooked my poorly boy a carbonara and watched a movie with my kids! I then went on the roof terrace with a cappuccino, enjoying the lovely views and the cool breeze, watching the people party in Chania.
Below is a picture of the Kiani Beach Resort! It is lovely, friendly and a great place to go in the day! I highly recommend it! Ps Kyriacos, hope you liked your prezzie :)

Summers finally here!

Well, here i am again in sunny Crete! The weather is simply gorgeous and so is Villa Dioneysia! Yes, thats right, it is finished and looking wonderful!. This time, I have come to Crete  with my 4 children so everything is slightly hectic at the moment. Well, not for them, as everyday they just sunbathe on the roof terrace, working on their tan!

Now that Villa Dioneysia is fully furnished, it looks wonderful and the first thing my daughter said was: 'It feels very homely.' Its amazing, because after a day of either chilling on the roof terrace, or enjoying a trip to the beach (just round the corner,) we just come home, get ready and head to the port for some drinks and some food! The port of Chania has so much to offer, with a buzzing atmosphere, you would be stupid to miss out! Cretan food is so delicious too. I'm a fan of seafood, however there is much more to offer, such as homemade meatballs, stuffed burgers and excellent salads. The restaurants always have a good atmosphere, whether it be a Monday night, or a Saturday, where there is always entertainment, such as traditional live Greek music.

Yesterday, i made my first meal in, which was spaghetti bolognaise. The kids loved it and where all excited as we were picking up my eldest son Harry from the airport. I'm so thrilled with the end result of Villa Dioneysia, it already feels like home and is so central it's great! Anyway, I've just come back from a hard day of relaxing on the beach, and am now off up to my roof terrace, with a glass of local rose wine, to enjoy the sea views, so i will catch you later, love Denise x

Things are coming together!

window carcasses
the stained windows
the stair railings
The start of the year has seemed to gone very quickly and villa Dionysia has moved on slowly! But finally Andreas's Dad has arrived from Cyprus where he has been busy hand crafting the bedroom furniture and the kitchen cupboards. These are now on their way over to Crete. The windows are this week being stained and the staircases will be finished off., with the wooden steps being put in place. The wooden floors also will need laying down. There is still quiet a bit to do! I shall be choosing curtain material soon and I'm busy trying to decide which handles I want on the cupboards.
At Cretan Life we have also been busy setting up a holiday rental company, which will have several houses in Chania which will be available to rent out through our new company 'rent a property in crete'. This is a new and exciting venture and at the moment we have my Villa, a two bedroom apartment on the harbour front  and a couple of other old houses in Chania with more coming on to our books every week. Watch this space for more information!

Happy New Year

Happy new year to everyone, I hope it was a good one. I spent a fantastic time with my children but are glad they have all gone back to work, school etc.
At Cretan Life we are looking forward to 2011 we have a new and exciting venture happening soon, watch this space! and we are looking forward to meeting old and new friends once again in Chania.

Villa Dionysia has not had too many transformations over xmas because Kyrillos my builder  returned home to Bulgaria for xmas with his family and most of the work is waiting to be completed in the new year. At the moment I'm waiting for the wooden floor to be fitted and the final coat of paint applied. Andreas's father who is from Cyprus will come over to fit the oak floors, he has been busy over xmas making my kitchen units and hand crafting items of furniture to go in the bedrooms and around the house. I can't wait to see it all. Before Xmas he came ove to Crete for a month and made all the window frames and the shutters and fitted it all so the house was water tight ready for the winter! Above are some pictures to show you how fantastic the house is looking . More to follow soon. I need to start choosing curtain material to finish the villa off.. Catch up soon Denise x
